Food Porn Friday | White Chocolate Blueberry Bread Pudding

I can’t believe it’s here, the first Friday of 2011. Or shall we say the first Food Porn Friday of 2011. For this one I took a page from the book of food pornography, that is to say from the Food Porn Daily cookbook I got Meesh for Christmas. It is essentially filled with pictures of food that will turn you on and simple recipe’s to go with them.

Because I am obsessed with bread pudding, I decided to try out their White Chocolate Blueberry Bread Pudding, adapting the recipe to my likings.  I made it for a family gathering over the holidays and needless to say it was absolutely amazing, as almost all bread pudding is. My family was also quite impressed, especially my mom who happens to read Just Add Cheese on a daily basis and for whatever reason I think she thinks the food cooks itself.

I know January’s all about being skinny, but whatever, go ahead and indulge that sweet tooth craving!

White Chocolate Blueberry Bread Pudding

Ingredients

  • 1/2 cup heavy cream
  • 2 cups white chocolate chips
  • 5 eggs
  • 1/2 cup whole milk
  • 1 cup granulated sugar
  • 1/2 tsp. salt
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. pure almond extract
  • 1 loaf day old bread, cut into cubes
  • 1 1/2 cups ripe blueberries
  • 1 tbsp. soft butter

Directions

1. First, preheat the oven to 350°. Take a 8×11 or 5×10 baking dish, grease, and set aside.

2. Take stale bread and set aside, if the bread isn’t very dry, place it in the oven for 30 minutes set at 300° to absorb some of the moisture. Be careful! Check on it to make sure it doesn’t toast or burn.

3. Heat heavy cream in saucepan over medium-high heat. Stir occasional so it does not burn and heat until almost boiling.

4. Take one cup whit chocolate chips and place in heat-safe mixing bowl. Pour almost-boiling cream over chocolate and let sit for one minute. Stir until chocolate completely dissolves.
5. Combine heavy cream/chocolate mixture with eggs, sugar, whole milk, salt, vanilla and almond extract. Whisk until it is completely blended together.

6. Add bread cubes to the mixture, making sure every piece is completely coated. Soak in batter for 15 minutes, stirring every few minutes.

Make sure everything is covered!

7. Don’t forget t add in the blueberries! Mix in evenly throughout bread mixture and add an additional half cup of chocolate chips, disbursing throughout. Pour into baking dish and spread a thick layer of soft butter over the top.

8. Bake for 50 to 60 minutes, or until golden brown and bouncy.

8. Let it cool for 20 minutes and it’s ready to serve. Goes best with vanilla ice cream!

    The ingredients list doesn’t have eggs in it, but the directions say to mix eggs. How many?
