Caprese in the summer is like soup in the winter, essentially… essential. The best thing about our favorite combination of tomato and cheese is that you can enjoy it in any way you want. Caprese is great as a sandwich, salad, appetizer, bruschetta, tart, pie, pizza, (I could go on for days…) and every form is equally delicious and easy to make.farmer's market capreseBut what’s even better than a classic caprese dish? A fresh-to-death farmer’s market caprese dish! Yup. I picked up some locally sourced caprese ingredients at the Dewey Square farmer’s market across from South Station during my lunch break the other day, and the caprese sandwich I assembled was nothing short of epic. People in my office actually drooled when they walked by my desk. I used sundried tomato bread from When Pig’s Fly Bread (York, ME), Mozzarella from Foxboro Cheese Co. (Foxboro, MA), and tomatoes and basil from MacArthur Farm (Holliston, MA) and just added olive oil, salt, and pepper. Local caprese is the best caprese. Get on it while tomatoes are in season!
